Pear Rosemary Lemongrass Cocktail Recipe

Cocktial ingredients

- 5 pears (medium size)
- 40g fennel
- 3 sprigs rosemary
- 1 inch fresh ginger
- 1 stalk lemongrass - chopped and crushed
- Ground nutmeg - pinch
- Ground vanilla - pinch
- 1 cup sparkling water or soda water
- Vodka

Cocktail Instructions

1. Place all of the peeled pears, 2 springs of rosemary and the ginger together in a blender and juice them together.

2. Pour the mixture from the blender into a small saucepan and place over a gentle medium heat. Then add the lemongrass, nutmeg and vanilla and bring the mixture to the boil.

3. Once it reaches the boil turn down the heat and let it simmer gently for 15 minutes until it thickens and then allow it to cool completely.

4. Once the mixture has cooled then pass it though a fine sieve into a cocktail shaker.

5. Add the vodka and soda water to the shaker and stir it gently to combine everything.

6. Fill your cocktail glasses with crushed ice and serve the mixture over the ice.

7. Garnish the cocktail with some sliced pears, fresh rosemary and enjoy!
